Cauliflower beets mash

Looking for a low carb /keto version of traditional mashed potatoes? Here is a cauliflower mash recipe for you! A healthier super tasty, creamy, low carb, and easy to make alternative recipe. 

1  Large Head Cauliflower 

4-6 Garlic Cloves finely chopped 

2 Cup of vegetable or miso broth

4 Cup Water or more as needed

2 Tbsp vegan butter 

½ Cup of JustOne Organics beets crystals

Salt and pepper, to taste

Fresh Chopped parsley to garnish if desired

Instructions

Place the cauliflower florets in a large pot and cover with broth and water.

Add in half of the garlic and salt and pepper as desired. Bring to a boil, then reduce the heat and simmer for 12-15 minutes, or until cauliflower is fork-tender.

Strain the cooked cauliflower and place it into a food processor. Add in the remaining garlic, butter and beets crystals; process until puree is smooth.

Place puree into a serving bowl/platter and sprinkle with fresh chopped parsley and a bit of butter so it melts on top. Enjoy!
