Blueberry Muffins

Blueberry Muffins

Ready in 1 hour + fermenting time + cooling time.

Serves 14 mini muffins.

Ingredients

  • ½ cup Blueberry Crystals
  • ¼ cup Apple Crystals
  • 2 cups flour blend of choice
  • 2 cups nut pulp
  • 1 cup yogurt
  • 1 tablespoon chia (measure, then grind)
  • 2 tablespoons coconut nectar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon apple cider vinegar
  • ½ teaspoon cinnamon
  • Salt

Preparation

  1. Mix together flour, nut pulp, yogurt, ground chia seed and coconut nectar. Let sit overnight.
  2. Add cinnamon, salt, baking powder and blueberry crystals. 
  3. In a tablespoon, mix ½ teaspoon baking soda and ½ teaspoon apple cider vinegar. Let fizz and add to the batter.
  4. Mix ¼ cup apple crystals with ¼ cup water. Add to batter.
  5. Mix everything together and scoop into muffin cups. 
  6. Bake for 50 minutes at 320°F.
