Mango Salsa

Ingredients
- 21g Mango Crystals (~ 0.75 oz)
- 2 medium tomatoes, roasted
- 1 teaspoon kashmiri paprika
- Juice from ½ lemon
- 2 tablespoons olive oil
- 0.5 oz cilantro
- 1 teaspoon apple cider vinegar
- Salt to taste
Preparation
- Roast the tomatoes: cut them into eighths, line on a sheet and bake at 320 degrees Fahrenheit for about 45 minutes. Set aside to cool.
- Chop cilantro.
- In a bowl, mix all ingredients together and eat with your favorite chips or crackers.
