Spinach Falafel

Spinach Falafel

Ready in about 3 hours

Makes 12 pattes

Ingredients

  • 7g Spinach Crystals (~ 0.25 oz)
  • 1 medium zucchini
  • 1 cup oats
  • 1 tablespoon tahini
  • 2 tablespoons rice water
  • 1 tablespoon ground flax
  • 1 teaspoon lemon extract
  • ½ teaspoon pink salt
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • 1 oz fresh cilantro
  • 1 tablespoon oil for frying

Preparation

  1. In a blender, blitz together oats and chopped up zucchini. 
  2. Transfer to a large bowl. Add the rest of the ingredients in and mix. 
  3. Let the mixture sit for 2 hours. 
  4. Drop spoonfuls onto a cast iron skillet and fry on both sides, just enough to form a crust. 
  5. Bake the patties in the same skillet for 25 min at 325 degrees F.
