Spinach Falafel
Ready in about 3 hours
Makes 12 pattes
Ingredients
- 7g Spinach Crystals (~ 0.25 oz)
- 1 medium zucchini
- 1 cup oats
- 1 tablespoon tahini
- 2 tablespoons rice water
- 1 tablespoon ground flax
- 1 teaspoon lemon extract
- ½ teaspoon pink salt
- ½ teaspoon paprika
- ½ teaspoon cumin
- 1 oz fresh cilantro
- 1 tablespoon oil for frying
Preparation
- In a blender, blitz together oats and chopped up zucchini.
- Transfer to a large bowl. Add the rest of the ingredients in and mix.
- Let the mixture sit for 2 hours.
- Drop spoonfuls onto a cast iron skillet and fry on both sides, just enough to form a crust.
- Bake the patties in the same skillet for 25 min at 325 degrees F.
