Banana Bread

Ready in 75 min + fermentation time

Serves 4


  • 1.5 cups Banana Crystals
  • 2 cups oat flour
  • ½ cup maple syrup
  • ¾ cup kefir + ½ cup kefir
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ⅓ cup Apple Crystals + ⅓ cup water
  • Juice of ½ lemon


  1. Mix together 2 cups oat flour, ½ cup maple syrup and ¾ cup kefir.
  2. Ferment overnight.
  3. Once the mixture has fermented, add to it: Banana Crystals, baking soda, baking powder, salt, lemon juice. 
  4. Mix the Apple Crystals and water and stir to make apple sauce. To the batter.
  5. Stir everything together and add up to ½ cup of kefir for everything to mix well into soft batter. 
  6. Bake at 320 degrees Fahrenheit for 50 minutes. Cool. 


This banana bread is not too sweet. If you like yours on a sweeter side, add raisins, dates, or add more maple syrup.
