Banana Bread
Ready in 75 min + fermentation time
Serves 4
Ingredients
- 1.5 cups Banana Crystals
- 2 cups oat flour
- ½ cup maple syrup
- ¾ cup kefir + ½ cup kefir
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- ⅓ cup Apple Crystals + ⅓ cup water
- Juice of ½ lemon
Preparation
- Mix together 2 cups oat flour, ½ cup maple syrup and ¾ cup kefir.
- Ferment overnight.
- Once the mixture has fermented, add to it: Banana Crystals, baking soda, baking powder, salt, lemon juice.
- Mix the Apple Crystals and water and stir to make apple sauce. To the batter.
- Stir everything together and add up to ½ cup of kefir for everything to mix well into soft batter.
- Bake at 320 degrees Fahrenheit for 50 minutes. Cool.
Tips
This banana bread is not too sweet. If you like yours on a sweeter side, add raisins, dates, or add more maple syrup.
