Beet Crystal Pate՛

Ready in 15 minutes, including doing dishes

Serves 2


  • 2 cups nut mash*
  • 1 cup beet crystals
  • Juice from 1 small lime
  • ½ teaspoon cumin
  • ½ teaspoon Kashmiri chili powder
  • Drizzle of olive oil
  • ¼ cup cashew kefir
  • Pink salt to taste
  • Optional add-ins: cilantro, lentils, cheese, garlic


This one’s super easy: put everything into a blender. Blend. Serve.


* If you make nut mylk at home, use the left-over pulp for this recipe. If not, blend up a cup and a half of pre-soaked nuts. Don’t skip the soaking!
