Spinach Vanilla Cake

Spinach Vanilla Cake

Makes one 8x8 pan

Are you one of those bakers who just needs to know the consistency of the dough and doesn’t measure the ingredients? This cake is perfect for that. Skip the measurements, make a great cake! The consistency is cake batter. 

Ingredients

  • 7g Spinach Crystals (~ 0.25 oz)
  • 10 oz yogurt of choice
  • 1 tablespoon vanilla extract
  • ¾ cup coconut sugar
  • 2 cups flour blend of choice
  • Pinch pink salt

Icing: 

  • 2 medium sweet potatoes, cooked
  • 3 tablespoons cacao powder
  • 1 tablespoon coconut oil
  • Pinch pink salt
  • 3 tablespoons maple syrup

Preparation

  1. Mix everything together and let sit for a couple of hours. 
  2. Bake at 325 degrees F for 25 minutes. 
  3. Mix and beat  frosting ingredients together. Spread on cooled cake. 
  4. Layer up! with more frosting.
